Classic meets cutting edge in the kitchen of David Waltuck, chef and co-owner (with his wife Karen) of the forever-trendy Tribeca eatery, Chanterelle. A world traveler, Waltuck’s signature cuisine is a seamless blend of delicious flavors from Europe and Asia, prepared with French classical techniques, using the freshest possible produce, seafood, domestic and imported game. Housed in the former Mercantile Exchange, this 20-year-old restaurant is sophisticated, yet refreshingly laid back; it’s entrance is a mini gallery with artwork by Mapplethorpe and Nevelson, and an antique armoire is used instead of a coat room. With soaring ceilings, towering floral arrangements, and tables spaced far apart (so celebrities and celebrants can’t overhear each other’s conversations), the site just right for savoring Waltuck’s grilled seafood sausage, lamb with cumin salt crust, and architectural desserts.
